Ingredients:
1 litre buttermilk
1 Romaine lettuce diced
I onion diced
1 carrot diced
1 tbls flour
1 big piece of bacon chopped
1 tbls oil
salt and pepper
vinegar to serve
Method:
Step 1
On medium heat add 1 tbls of oil into a hot pot and fry the bacon.
When the bacon turns crisp add the onions and carrots. Keep stirring until the onion becomes translucent.
At this point add 4 cups of hot water. It must be hot water, not cold. Let this water come to a boil.
Step 2
Once the water starts to boils add the lettuce all at once. Wait until the soup comes to a boil.
Add salt and pepper to taste.
Step 3
Mix the flour with a little water. Whisk the buttermilk to this mixture a little at a time until all the buttermilk is incorporated.
Pour the buttermilk mixture into the boiling soup and let it boil for a further 3 minutes. The buttermilk lettuce soup is now ready. It’s that simple.
To serve:
Serve it hot on a cold wintry weekend with a few drops of white vinegar. The vinegar tones down the sourness of the buttermilk.
