Dinner Rolls with Herb Salt

Dinner Rolls

You will need a bread Machine and about 2 hours for this recipe.

Wet Ingredients:

1 cup milk or evaporated milk from the can

3 tbls margarine

1 tbls olive oil

3 tsp herb salt

1 tsp cumin seed

3 tbls white sugar

Dry Ingredients:

3 tsp instant dry yeast

2 cups white flour

3-4 cups wheat flour, more or less

Egg wash

1 egg yolk beaten

A pinch of salt

Tips!

  • To make bread using a bread machine first of all you have to know all the settings on your bread machine. You have to know it well.
  • Use the dough setting of your bread machine to make the dough.
  • I have to place all the wet ingredients into my bread machine first so I’ve categorized the ingredients accordingly.
  • It takes about 15’ to fill the bread machine the night before. The dough will take the whole night to rise slowly.
  • Shape it and pop it into the oven the next day.

Method:

  1. Add the wet ingredients into the bread machine first, in no particular order.
  2. Then add all the dry ingredients.
  3. The flour goes in last on top of all the other ingredients.
  4. Put the yeast in the middle of the flour and push some flour over to cover the yeast.
  5. Start the machine. From time to time use a spatula and push the dough sticking to the side of the wall to the center.
  6. The finished dough should be in a non-sticky ball. It shouldn’t stick to your fingers.
  7. Add the flour a little at a time until the dough reaches the right consistency.
  8. At the end of the cycle take the dough out and let it proof for an hour to two outside on the kitchen table.
  9. After the dough doubles in size, take it out of the bowl and punch it down again until the bubbles disappear.
  10. Shape the dough into desires shape and size and let it proof again.
  11. Mix the egg and salt together and brush it over the dough.
  12. Bake it in the oven for 35’ at 300 degrees.
  13. A skewer inserted into the bread should come out clean
  14. Brush the top of the bread loafs with butter immediately.

Variation

The same dough was used for Rosemary and sun-dried tomato loaf.
