Kids not eating their greens, try this zucchini with feta recipe.

Ingredients:

5 zucchinis grated and the water squeezed out

2 cups feta cheese drained and crumpled

2 eggs beaten

1-2 cups flour

pepper

oil for frying

 

Method:

  1. Use a food processor to speed up the process.
  2. Squeeze the water out of the grated zucchinis completely.
  3. Mix the zucchini, feta, pepper and eggs together.

 

Mix all the ingredients together.

  1. Add the flour ½ cup at a time to combine the mixture to form a firm consistency.
  2. You should be able to form a non-sticky ball in your hands.
  3. Pat the ball down like a patty.
  4. Heat a little oil in a skillet and fry the patties for 6′ a side.
  5. Alternatively, the balls can also be deep fried.
  6. The zucchini patty doesn’t need much cooking.

 

Time: 1/2 hour, from prep to table

Serves: Makes about 20 patties, see them fly off the stove.
