Zucchini patties
Kids not eating their greens, try this zucchini with feta recipe.
Ingredients:
5 zucchinis grated and the water squeezed out
2 cups feta cheese drained and crumpled
2 eggs beaten
1-2 cups flour
pepper
oil for frying
Method:
- Use a food processor to speed up the process.
- Squeeze the water out of the grated zucchinis completely.
- Mix the zucchini, feta, pepper and eggs together.
- Add the flour ½ cup at a time to combine the mixture to form a firm consistency.
- You should be able to form a non-sticky ball in your hands.
- Pat the ball down like a patty.
- Heat a little oil in a skillet and fry the patties for 6′ a side.
- Alternatively, the balls can also be deep fried.
- The zucchini patty doesn’t need much cooking.
Time: 1/2 hour, from prep to table
Serves: Makes about 20 patties, see them fly off the stove.
