I’m fortunate enough to be able to make the food taste good as well as look good. In Malaysia the saying goes — “the food must look and smell good to eat“.
The Recipe
This is a salad everyone can enjoy. Vegetarians and vegans can eat it without the dressing and shrimp or opt for a vegan dressing. It’s super tasty and incredibly easy to make.
Let’s get started.
Ingredients:
- 1 huge jicama shredded
- 2 kohlrabi shredded
- 2 cups seaweeds, boiled for 5’ (you can find it at Wholefoods or the Chinese store)
- 4 ribs celery thinly sliced
- 2 cups water chestnuts, peeled and boiled for ten minutes (or buy frozen)
- 2 cups shrimp peeled, deveined and cooked – see TIP below
- a handful soy bean sprouts
- a handful of fresh coconut shavings (or dried, if you don’t have fresh)
- ½ cup peeled peanuts, toasted and roughly pounded
- 1 tbsp black sesame seed toasted lightly
- 1 tbsp white sesame seed toasted lightly
- ½ cup tom yum dressing – see recipe link below

*TIP
How to cook shrimp or prawns to perfection.
Seafood should always be cooked within the 2-3 minute rule. Nothing more.
Method One
Saute the shrimp in a wok or pan in a little oil over high heat, turning occasionally for 2 to3 minutes.
Remove them immediately from the pan when they turn orange.
If you leave them in the pan, they will continue cooking, thus overcooking.
Method Two
Boil some water in the pan and boil it.
Remove the pan from the stove and heat once the water boils.
Add the shrimps and close the pan with a lid.
Since the water is hot and cooling down, the shrimps will cook perfectly within ten minutes.
Instructions for the salad:
- Mix in all the vegetables and shrimp.
- Mix it and leave it in the fridge.
- Add the tom yum dressing and peanuts and toss it around just before serving.
- This salad becomes soggy is left with the dressing for too long.
- Sprinkle with toasted sesame seeds.
Now, it’s ready. A super simple and healthy meal.
