Homemade Fried Chicken
I tried a combination of Popeye’s, KFC and southern fried chicken, which turned out, darned good. Due to popular demand I am uploading this recipe to my blog so that everyone who tasted this recipe can try it for themselves. I fried it and played around with the ingredients and this has been the best. Folks were queuing up behind me during frying.
Ingredients:
Chicken
Buttermilk
Salt
Black pepper
8 chicken breast cut into big but bite size pieces
Chicken thighs or drumsticks can also be used.
Marinade the chicken for one day in buttermilk mixture. You can skip this part if you have an awful craving for some good old fried chicken. It does happen sometimes.
If you just remember you start this process the night before, the fried chicken tastes
better.
Step 1
Buttermilk mixture
3 cups buttermilk
1 tbls salt
1 tbls black pepper
Step 2
Hot flour mixture
2 cups flour
1 cup corn flour
2 tbls salt
1 tbls black pepper
1 tbls onion powder
1 tbls garlic powder
3 tbls paprika
2 tbls cayenne powder/chipotle or Serrano powder or more
1 tbls mustard powder
1 tbls celery salt
1 tbls baking powder
Remove and leave ½ cup of this mixture aside before adding the water
Enough water to make a thick paste
Oil for frying
Remove chicken from buttermilk mixture and mix it in the hot flour paste.
Be patient, you have to let the chicken marinade in the fridge for at least, at least 4 hours.
Step 3
Cornflake mixture
½ of hot flour mixture
6 cups cornflakes crushed
Big Ziploc bag
Method:
Marinade the chicken for one day in buttermilk mixture. You can skip this part if you have an awful craving for some good old fried chicken. It does happen sometimes.
Remove chicken from buttermilk mixture and marinade it in the hot flour paste.
Remove chicken from the hot flour paste.
Place a few pieces of chicken into the Ziploc bag containing the cornflakes mixture and shake it.
Remove the chicken and fry in hot oil until golden brown.
Serve it with homemade coleslaw and mashed potatoes.
