Home-baked Mac and Cheese
I started this blog because even with numerous cooking shows and cookbooks out there, there are many of us who still don’t know how to cook a simple nutritious meal. I feel that the number is growing everyday due to having a full time job and being overwhelmed with the daily struggles of life. We opt to purchase boxed meals or fast food. Everyone should know how to cook. It’s a necessity.
This recipe is dedicated to my good friend Maryanne and her lovely daughter Angelina.
Saucy, gooey and yummy…
If you want your kids to eat healthy, learn to make it from scratch. Cooking should be simple and fun but certainly not instant. Learn to use a few good kitchen tools and clean as you go along.
There are three parts to this timeless classic: – the sauce, the pasta and the topping.
After tasting this delicious version made from scratch, you’ll never make mac and cheese out of a box again.
Ingredients: From clockwise – butter, buttered breadcrumbs, pasta, milk, cheese, flour, mustard, salt, pepper and Worcestershire sauce on plate.
Sauce
3 tbls butter
3 tbls flour
1 tbls salt
a pinch of pepper
3 cups milk
3 cups grated Cheddar cheese
½ tsp Worcestershire sauce (must have)
½ tsp mustard
Pasta
2 cups elbow macaroni
Topping
1/3 cup breadcrumbs (make your own by crumbling two slices of bread or a 1/2 a burger bun)
¼ cup grated Cheddar cheese
1 tsp butter
Method:
On medium heat melt the butter and blend in the flour, salt and pepper with a whisk.
Add the milk and stir constantly until the mixture thickens.
Remove the pan from the heat and add the 3 cups of grated cheese, Worcestershire sauce and mustard.
Keep stirring until smooth.
Cook the macaroni in salted boiling hot water until al dente. Remove and drain the pasta well. Add the pasta into the sauce and pour into a baking dish.
Mix the breadcrumbs one teaspoon of butter and ¼ cup cheese and sprinkle on the mixture. Press it down gently.
Bake it in the oven for 20’ at 300°C.
I would recommend investing in a toaster oven. Twice the efficiency than the regular oven for just $50 bucks or so.
Serve this home-baked mac and cheese with salad.
