  • 2 tbls butter mixed with \u00bc cup flour \u2013 keep aside<\/li>\n
  • 1 tbls cornstarch mixed with \u00bd cup milk \u2013 keep aside<\/li>\n<\/ul>\n

    • 1 onion diced<\/li>\n
    • 1 carrot diced<\/li>\n
    • 1 celery stalk diced<\/li>\n
    • 1 huge potato cubed<\/li>\n
    • 2 cups raw chicken diced, mixed with 1 tbls Worcestershire sauce and seasoned with salt and pepper and the herbs<\/li>\n
    • \u00bd cup peas<\/li>\n
    • 1 cup chicken broth for a richer saucier filling or water<\/li>\n
    • 1 tsp thyme<\/li>\n
    • 1 tbls sage<\/li>\n
    • 1 tbls parsley<\/li>\n
    • 1 tbls curly parsley<\/li>\n
    • 1 tbls chives<\/li>\n
    • 1 tsp paprika<\/li>\n
    • 1 tsp cayenne pepper<\/li>\n
    • 1 tbls lemon juice<\/li>\n
    • 1 tsp pepper<\/li>\n
    • salt<\/li>\n<\/ul>\n

      Method:<\/strong><\/em><\/h3>\n
        \n
      • Melt the butter and saute the onion, carrot, celery and potatoes.<\/li>\n
      • Add the chicken, salt and pepper and simmer for 10 minutes until the potatoes are just tender.<\/li>\n
      • Add the rest of the spices.<\/li>\n
      • Add the kneaded butter and stir until dissolved.<\/li>\n
      • Next\u00a0add the cornstarch mixture and bring to a boil.<\/li>\n
      • Stir in the peas and add the lemon juice and let the mixture cool.<\/li>\n<\/ul>\n

        \u00a0<\/em><\/strong><\/p>\n

        Pastry \u2013 makes two 9 inch pie crusts<\/em><\/strong><\/h3>\n
          \n
        • 2 1\/2 cups flour<\/li>\n
        • 1\/2 tsp salt<\/li>\n
        • 1 cup cold margarine<\/li>\n
        • 1\/4 cup ice water<\/li>\n
        • 1 tablespoon white vinegar<\/li>\n
        • Milk or beaten egg for brushing<\/li>\n<\/ul>\n

          Method:<\/em><\/strong><\/h3>\n
            \n
          • In a food processor, combine the flour and salt.<\/li>\n
          • Add the margarine and pulse a few seconds at a time until the mixture resembles breadcrumbs.<\/li>\n
          • Add the water and vinegar, and pulse again until the dough just begins to form. Add water 1 tablespoon at a time.<\/li>\n
          • Remove the dough from the food processor and form into two balls.<\/li>\n
          • Refrigerate for 30 minutes or overnight.<\/li>\n
          • Preheat the oven to 200 \u00b0C.<\/li>\n
          • Roll out the dough and line a 9-inch pie plate.<\/li>\n
          • Roll out the other ball for the top.<\/li>\n
          • Spoon the chicken filling into the crust. Brush around the dough with milk and cover with the second sdough.<\/li>\n
          • The milk acts as a binding agent to seal the edges of the pie.<\/li>\n
          • Flute the edges and brush the top of the pie.<\/li>\n
          • Bake for 30-40 minutes until the pastry is golden brown.<\/li>\n<\/ul>\n
