Ingredients:<\/p>\n

1 litre buttermilk<\/p>\n

1 Romaine lettuce diced<\/p>\n

I onion diced<\/p>\n

1 carrot diced<\/p>\n

1 tbls flour<\/p>\n

1 big piece of bacon chopped<\/p>\n

1 tbls oil<\/p>\n

salt and pepper<\/p>\n

vinegar to serve<\/p>\n

Method:<\/p>\n

Step 1<\/p>\n

On medium heat add 1 tbls of oil into a hot pot and fry the bacon.<\/p>\n

When the bacon turns crisp add the onions and carrots. Keep stirring until the onion becomes translucent.<\/p>\n

At this point add 4 cups of hot water. It must be hot water, not cold. Let this water come to a boil.<\/p>\n

Step 2<\/p>\n

Once the water starts to boils add the lettuce all at once. Wait until the soup comes to a boil.<\/p>\n

Add salt and pepper to taste.<\/p>\n

Step 3<\/p>\n

Mix the flour with a little water. Whisk the buttermilk to this mixture a little at a time until all the buttermilk is incorporated.<\/p>\n

Pour the buttermilk mixture into the boiling soup and let it boil for a further 3 minutes. The buttermilk lettuce soup is now ready. It\u2019s that simple.<\/p>\n

To serve:<\/p>\n

Serve it hot on a cold wintry weekend with a few drops of white vinegar. The vinegar tones down the sourness of the buttermilk.<\/p>\n
