A simple winter soup to warm those rosy cheeks and cold-nipped noses. A sure hit with the kids. <\/span><\/p>\n

Ingredients:
\n3 stalks celery, peeled and thinly sliced.
\n2 potatoes, peeled and diced
\n3 cups chicken stock or water
\n1\u20442 cup Brie or Camembert cheese or 2 tbsp Blue cheese (rind removed)<\/span><\/p>\n

1 cup pecan or walnuts chopped
\ncelery leaves or parsley, <\/span><\/p>\n

salt and pepper
\n<\/span><\/p>\n

Method: <\/span><\/p>\n

Simmer the celery and potatoes in the stock for 30\u2019 until the vegetables are tender. <\/span><\/p>\n

After 30″ add the cheese and season to taste. \u00a0<\/span><\/p>\n

Wait until the cheese melts…<\/span><\/p>\n

Use a hand held mixer to purify the soup. (pay attention and be careful if using a blender)<\/span><\/p>\n

Return the mixture to the stove and let the soup come to a boil, just once while still stirring.<\/span><\/p>\n

Remove from heat. <\/span><\/p>\n

Pour it into bowls. <\/span><\/p>\n

Sprinkle with nuts and insert a celery or parsley leaf in the middle.<\/span><\/p>\n

Toast a few slices of bread in the toaster. Slather with butter. Cut them into squares.<\/p>\n

OR cut into squares and mix them into butter.<\/p>\n

Voila, instant croutons.<\/p>\n
