OR, the must try easy method. (15\u2019 tops) You need a microwave for this one.<\/em><\/strong><\/p>\n

Step 1<\/p>\n

Break the eggs into a bowl.<\/p>\n

Break the eggs slightly with a fork, once again, do not beat them. (Do not use a whisk either.) Keep it aside.<\/p>\n

Step 2<\/p>\n

Brown the sugar slightly in a pan. When the sugar has changed color, let it cool. Pour in the coconut milk slowly, a little at a time and keep stirring until the sugar completely melts. Do not let it boil.<\/p>\n

(OK, if you do mess up during this step, just strain the mixture and smooth it out into a new pan)<\/p>\n

Discard the rest of the lumpy sugar.<\/p>\n

Step 3<\/p>\n

Remove the pan from the stove and add in the egg mixture slowly while still stirring. Add the screwpine leaves and vanilla.<\/p>\n

Pour this mixture into a ceramic bowl. Transfer the bowl to the microwave.<\/p>\n

 <\/p>\n

Step 4<\/p>\n

Place the bowl into the microwave for 1 minute on High.<\/p>\n

Take it out and stir it slowly with a whisk. (as with anything hot coming out from the microwave \u2013 keep your face way from the mixture when stirring)<\/p>\n

You can use the whisk at this stage. Scrape all the sides down.<\/p>\n

Put it back into the microwave again for 1\u2019.<\/p>\n

Keep repeating this step for 3 or 4 minutes more. One minute at a time.<\/b><\/p>\n

 <\/p>\n

Return the bowl to the microwave one minute or 50 seconds at a single time. No more.<\/p>\n

Once it reaches the consistency of potato puree or starts coating the back of a wooden spoon thickly – stop.<\/p>\n

Let it cool. As the kaya cools it will get thicker and darker in color.<\/p>\n

Remove the screwpine leaves and enjoy a delectable spread called \u201ckaya<\/i>\u201d. Kaya means rich in Malay.<\/p>\n

Indeed it is a rich coconut jam spread. And sometimes duck eggs are used for richer fat content.<\/p>\n

As with all things you will get better at this recipe with repetition.<\/p>\n

My kids can\u2019t get enough of it.<\/p>\n
